MyMiddle-earth Recipes 2 weeks, 4 days agoI had a bunch of kale in the fridge that I’d nearly forgotten about! I was watching Martha Stewart’s Cooking School on PBS last week and she had a recipe on making creamed spinach soup. It looked delicious and it was a beautiful looking dish as well. So i decided to use her recipe but substituted kale and I added chopped bacon bits and shredded…[Read more]

MyMiddle-earth Recipes 1 month, 1 week agoIt’s been a long time since I’ve had ambrosia and there are so many recipes out there. I remember having one some years ago at a gathering and it was the best I ever tasted but I never did get the recipe. :(
-
Mine is so easy it’s ridiculous. I just mix together a well-drained can of fruit salad and/or a couple of sliced bananas, two well-drained cans of mandarin oranges, a small bag of shredded coconut, and a container of sour cream. Let it sit overnight for the flavors to blend. That’s it, but for some reason it’s a big hit. :) I think the…[Read more]

Thanks for the recipe. I’m going to try it, one with unsweetened whipping cream and then the other with sour cream. Thanks!

MyMiddle-earth Recipes 1 month, 4 weeks agoCuriosity:
Do you have a recipe that you’re ”known” for? What is that one thing that people ALWAYS ask you to bring when you’re invited to a party?-
Buttermilk Pye… haven’t made it since… well ages. It is very high in sugar (3 cups in 2 pyes) and too many folk now days can’t have sugar but…….. YUM!!!!!
-
Oh, I think that’s what we call ”Shoofly Pie” – my grandmother used to make that! Delicious!
-
-
My ”most requested” recipes to being to a party are Ambrosia, potato salad, and ”gourmet” mac-n-cheese. Simple, down-home comfort food. :)
-
I’m all about the desserts so I often get asked to make the following.
*Chess Squares*
1 box Yellow cake mix
1 stick butter
4 Eggs, beaten
8 ounces Cream cheese
1 pound Powdered sugarMix well the cake mix, butter and 1 egg. Press into an ungreased 9×13 baking pan. Cream the powdered sugar, cream cheese and 3 eggs until smooth. Pour on top…[Read more]

Wow, these both sound terrific! Thanks for sharing! Is that cake frostable? It sounds like a good one to make for my daughter’s upcoming birthday, with a cream cheese frosting, perhaps? Or is the cake too sticky for frosting?
-
Oh the chess squares definitely don’t need icing. They’re more like ”bars” rather than a cake (I’m sure there’s an official name for this style of ”bar”). Here’s a site with a few pics: http://www.kevinandamanda.com/recipes/dessert/chess-squares.html
They’re REALLY good though!
-
Oh, ok, thanks! We can still serve them at the party, since there’ll be tons of food, and extra desserts will be needed !! :)

MyMiddle-earth Recipes 2 months agoLeftover corned beef and colcannon today became an Irish Shawarma. Well, that’s what my daughter called it, anyway. I had some garlic naan bread, on which I placed slices of corned beef. I then spread colcannon on top and heated the whole thing, folded it in half and served it like a taco. It was received with great enthusiasm, and given the…[Read more]

MyMiddle-earth Recipes 2 months agoThis recipe has two title options, whimsical or practical.
Whimsical: “A Hobbit’s Dream”
Practical: “Mushrooms with Bacon”Mushrooms (with concave cap)
Bacon
Salt
Pepper
PaprikaRinse the mushrooms and gently remove the stems. Cut the strips of bacon in half. Fold each half accordion-style and place into mushroom cap. Season with the salt,…[Read more]

Wonderful !! I’m going to try it with turkey bacon. The lack of fat may prove to be problematic, I’ll let you know. I’m wondering, also, if this could be done with sausage?
-
I don’t think that would be a problem. You have to get rid of the melted fat anyway, because it pools in the pan. I don’t have any sausage on hand, but I think I’ll try it. Mushrooms taste good with pretty much anything anyway!

MyMiddle-earth Recipes 2 months, 1 week agoCultured (fermented) chili sauce
I would imagine only the people of Harad or the Southrons would be making and eating this. I had a bunch of serrano peppers that I needed to use up. I bought a few red jalapeno peppers to add color and sweetness and I had one habanero pepper on hand:1-2 lbs of peppers (jalapeno, serrano and habanero (or any mix…[Read more]

Sounds great! What have you tried it on?
-
I ferment a lot of stuff but this is the first time I’ve tried my hand at pepper sauce. I’m planning on using it to marinate some flank steak this weekend.
-
Oh, let me know how it turns out! Sounds like it would produce a nice, tenderized flank, what with the pickling juices from the kraut and the lime juice ! And the flavors – wow! I can’t wait! What time did you say dinner is? ;)

MyMiddle-earth Recipes 2 months, 2 weeks agoSo, what’s everyone cooking this morning? My breakfast consists of a fluffy mushroom omelet (with lots of cheese, of course), toast with fresh butter, and a pot of tea.
For second breakfast, I’m making scones with blackberry jam.
Lunch is undecided at the moment.
Have to bake more of Luthien’s West Farthing Herb Bread to serve with dinner,…[Read more]-
I love blackberries and fortunately live where they grow like weeds (literally, quite a bit of spring yard work is hacking down looming blackberry vines) so there’s always plenty available come summer for jamming.
But more importantly, I had a Hobbity breakfast of an omelette and (very) peppery bacon though I tossed in what I imagine is some not…[Read more]

Mmmm. I love blackberries. We have a very large, thorny blackberry bush in the back yard!
Your breakfast sounds great. I don’t think avocados are un-Hobbity! Of course, we have to have them imported. That Bilbo Baggins can afford such luxuries as exotic green fruits from who-knows-where. His larder always seems to be stocked full of delicious…[Read more]
